Ingredients
One large head of Broccoli
One large Onion
Three cloves of Garlic
One can of White beans
About Three twigs of Rosemary
One and a Bit cartons of low sodium chicken broth
Handful of Red Lentils
One dollop of Non fat greek Yogurt
Chili Flakes
Chili olive oil and Cheese for topping
- rough chop onions and garlic put in pot with a bit of olive oil, saute.
- while the onion and garlic are cooking, clean and chop up broccoli ( i use the stems as well(dont tell my husband), just make sure to cut off the tough outside skin.)
- toss broccoli in pot stir and let cook for about six min
- pour in the chicken broth
- i decided last minute to throw in a handful of red lentils
- bring to a boil then turn down the temp, let is cook for about twenty min
- toss in white beans (you could use any bean really i just like white ones, chickpeas would be good too now that i think of it.)
- blend. (be careful its hot, hand blenders spray if you hold them to close to the surface, counter top blenders can explode when you blend hot liquid in them.) i learned both those things from trial and error. (eeek)
- I stirred in a tablespoon of non fat greek yogurt. you could use non fat sour cream instead. I add greek yogurt to almost everything. i love it.
- let heat up again and serve
- by serve i mean toss a ton of cheese and chili oil on top and sit back with whatever your eyes are into at the moment. (i got a bunch of magazines in the mail so that was my entertainment)
